Create the user flow for information extraction from text fields

There are already initial concepts for this feature. What needs to be done is:

• user flow
• open questions to clarify in a product call
• create relevant issues for the team backlog (3 issues: create, text with click to fill, and text with select/Multiselect) - Alex
• Add designs to the issues - JuanMa
