Description

We would like to upgrade Percy packages to the latest version as we have drifted quite far behind.

Please be aware they don't follow semantic versioning so it would be prudent to read their release notes on GitHub as part of doing the upgrade. Also because of this, we should pin to a specific version.

Tasks/Steps

Upgrade packages, and run tests to ensure that nothing has broken. It should be possible to run these locally.

Acceptance Criteria

We are on the latest version of Percy
