Change the format of offsets for all of the endian tests:

cp_byteoffset: coverpoint ins.current.imm[2:0] iff (ins.current.rs1_val[2:0] == 3'b000) {
// all byte offsets
}

Need the bottom 3 bits of rs1+ Imm
