Migrate databases to db-operator

What is it?

We would like to manage more things in our kubernetes/gitops setup. As such, we should manage our databases here as well. For nessie and the updated sqlmesh deployment we currently have those configured manually because @IcaroG and I discussed configuring things with db-operator as opposed to trying to detangle some of the issues we encountered when upgrading the old terraform scripts for the original database.

It's possible that we may need to write some additional automation around the db-operator and some other things will likely change for databases (like secret management).
