Change "Social Determinants of Health" dataset name to "Non-Medical Factor Measures" #22

As of 2/26/25, the "Social Determinants of Health" (SDOH) dataset has been renamed "Non-Medical Factor Measures" on the data.cdc.gov websites (here, for example) and in their API (here, for example).

We access the newly named dataset in this branch to get additional MOE values, so it would be appropriate to change the citation if/when we update this dataset for use in our tools. The citation would need to be updared on the data page on NCR, the demographics data sources listed in the API, and the github repo which links out to the source data.

Consider this ticket a reminder to update the reference in the README.md for this repo during the next launch!
